ABSTRACT The catering is an item that has been given much importance and dubs it a sector with strong income in their regions. Bolivia has many culinary wonders that cannot sit back knowing that this industry and / or service don’t affect the environment. Santa Cruz has several catering companies that provide services to various business sectors or social events large and small scale that can be optimized for the development of the sector. The idea of creating a catering to middle-class schools in the department of Santa Cruz, born of the need to promote good nutrition in schools students, so they can have a proper diet that can help them navigate so optimal in their studies, thus promoting good eating habits in students while ensuring the health of the same. Since this opportunity arises choose to create a catering you promote, disseminate, sell a service meal to the middle-class schools, as many do not have a complementary service than junk food in recreational times where students consumed daily snack. The difference of this catering to the others is that it does not compete directly with any other company located in the city of Santa Cruz, because no middle class school has no alternative other than the kiosks, unlike some schools that have a catering service but serving in different times by the double schooling. This project also saw a business opportunity with great prospects, promotes good eating habits in students.
